Crystallized Honey & Re-LiquifyingAll raw honey will eventually crystallize. Crystallizing is one of the things that makes raw honey so unique. It is also why it can stay unspoiled for thousands of years. This phenomena keeps honey from taking in moisture from the air. Too much moisture in honey and it will ferment. Crystallized honey is also your way of knowing you have unprocessed and unpasteurized honey. It is simple to re-liquify. Place your jar or bucket of honey in a pan hot tap water for about 20 minutes. Depending on how thoroughly the honey has crystallized, you may need to repeat. Never place honey in a microwave or boil.
